proof 1: room temp (20°C ~ 1 to 1 1/2 hrs)
proof 2: oven ~ 25°C 30 min
proof 3: oven 1 hr
proof 4: oven & room temp ~ 40-50 min
Baked 18 min with closed lid, 20 min without lid

Instead of 100% pollish added some whole wheat sourdough. Crust a bit too thick, air pockets too little… taste OK
